The word innovative is often bandied about but in the case of the Tippling Club it's particularly apt. These guys are pushing back the boundaries of fine dining, serving food that's technically exciting and seriously creative. Australian cocktail artist Matt Bax (Der Raum bar in Melbourne) and British chef Ryan Clift (formerly of Vue de Monde in Melbourne) have joined forces with the help of Ryan's wife Leesa, who runs front of house, and their backer Cynthia Chua, have masterminded one of Singapore's coolest venues - The Tippling Club.
The place is dominated by a 'huuuuge' bar in the middle of which is a science lab/kitchen. You have alcohol hanging from the ceiling, brown chem lab bottles of goodness knows what, syringes and dry ice, and glasses and plates of all shapes and sizes. You could sit at one of 3 tables available but the idea is to get a seat at the bar. That way you can get your food splained to you for maximum appreciation. They have a regular style menu but most people come here for the set tasting courses.
The menu comes in three formats: you can have five, 10 or 15 courses, and every dish is matched with a cocktail or wine. The drinks are awesome - you have to love a champagne cocktail called F*** the Sub Prime, and the food is out of this world: exhilarating multi-course tasting menus with tailored drink pairings. Cocktails are prepared using thermo infusions and other cutting edge techniques, are served in all manner of receptacles - including flasks and pill bottles - and dinner guests are even given a sachet of 'tippling tea' as they depart. Avant garde imbibing has never been so exciting. The skillful matching of food and drink is quite extraordinary and although it may sound like an awful lot of posturing and cleverness, it lovingly focuses fully on the palate and the mind. Things have obviously been created in the restaurant's lab but they are presented in such a fun way, with gorgeous abandon, madness and tastiness that you leave feeling rejuvenated and satisfied.
